Moist Banana Bread Recipe in the middle of Chaos

Moist Banana BreadHere’s the scenario: 
Hurricane Ike comes through your city and does some serious damage to everything around you.

Now you are without power and are staying with family that does have power. Kids are out of school for the entire week and some. (which means they are going crazy)

This morning my mom says “we have an entire bowl full of bad bananas” so I had a thought.  What do you do when life gives you bad bananas? Well, you turn it into Amazing Banana Bread and share it with those around you.

So that is what we did! We turned bad bananas into wonderful moist banana bread in the middle of our chaos.

PS - We used evaporated milk instead of buttermilk. You could also just use milk if you have it and add 2 extra eggs.

Hurrican Ike & Family

Whenever a hurricane warning is in effect for us in Houston, TX, it results in “big happy family get togethers”.  Everyone congregates (or “hunkers down”) at my parents house - a smaller house full of adults, children, and outsized personalities.  Of course that results in a ton of debates about politics, the world, who can cook the best bacon alla microwave or in the frying pan.  Imagine Thanksgiving dinner for three days, with a deadly storm approaching.  And like Thanksgiving, we always have way more food then anyone could ever consume.

And even Pat O’Brien would be proud of this Hurricane Party: we have ranges of alcohol to suit everyone’s taste ranging from Bourbon, Margaritas, to wine and champagne. But in reality, the liquor cabinet doesn’t see much action - we have lots of other distractions.  for 3-4 days, this smallish house will house 8 adults, 6 kids, 4 rabbits, and 1 dog.  Couches are converted to beds, beds have more than 3 people in them and we have 2 lovely bathrooms and 4 televisions.

The best part of the experience?  Watching reporters in their flimsy windbreakers, trying their hardest to be carried off by the wind and see a lifetime of reruns on Wildest TV Moments - Caught on Tape! 

Weird Factor - My parents have a clock that hasn’t worked in 10 years and it just went off all on its own. The time that was on the clock was 1:00.
